Week two gave us more rain on pick-up day, but this time there was thunder and lightening. Will, Herby and Ted stayed in the van while Lauren and I braved the storm in the name of veggies.
There were similar offerings: red leaf lettuce, mustard greens (peppery leaves of the mustard plant), hakurei, Swiss chard, scallions and spinach, but there were new vegetables, too, including red radishes and bok choy (Chinese white cabbage used in stir fry and spring rolls). We were a little jealous of the full share owners this week - they received broccoli, too! Hopefully we'll get to try that soon.
We made a salad with the lettuce, mustard greens and both radish varieties, topped with chicken strips and store bought cucumber and chick peas. Yum. We're loving the fresh greens-especially the varieties that are new to us.
The Food Lover's Companion by Sharon Tyler Herbst has been a great resource and helps us to learn about some of the vegetables that are unfamiliar to us. We'll try to include descriptions here and there to help.
Also, found a great recipe on epicurious.com for the swiss chard, sauteing it with raisins, onions smoked paprika and almonds. Very simple and really delicious.
